Optical Character Recognition (OCR) takes image-only PDFs and makes them searchable. A side benefit is that once a file is made searchable, you can export to an editable format like Word or RTF. Acrobat 9 can OCR in 42 different languages. This video looks at ClearScan, a new "flavor" of OCR that smooths out text and accelerates printing.
