Automatic Archival
Migrate old PDF Archives to PDF packages

how do we turn these off - we already have an archive software and do not want users able to perform these tasks, save the files somewhere and then have problems getting their emails back because they don't know where they are, they switched computers and forgot about the file, etc

If you're deploying to an enterprise, you can use the Acrobat Customization Wizard to decide which features are included.

The menu items you're referring to are part of the PDFMaker plugin for Outlook.
