"Archiving" completed/received interactive PDF forms' data

I suppose this question's been asked before but here goes anyway...
 
Say you have created your interactive data entry form and included an 'Email' button with a recipient's address incorporated into it, all of this with a view to getting those who receive this form to send their completed forms for archiving by the intended recipient.
 
My question's to do with how to assemble the recieved and completed forms. I read somewhere that the responses are collectible in a tabular way that lends itself to downloading to Excel. I also think I read somewhere that the images of completed forms can be assembled for review purposes. I don't know where in the help documenation or this forum I came across that. A reference(s) or the 'how to' instructions would be great.

You need Acrobat 8 Professional. When you get ready to email a form click the Distribute button on the Forms toolbar. Step through the wizard to set up a dataset and send your form to the intended recipients.

As forms comeback to you as email attachments, double click the attachment files and your dataset is updated (in the form of a PDF Package).

After receiving all forms, open the dataset (PDF Package) and click the Export button. The data are exported as a .csv file you can open in MS Excel.
