I have created a simple form using Acrobat Pro 8.1.0 on Mac OSX 10.4.10
 
There are 3 fields, v1, v2, and v3 and a calculated field 'total' which uses the Acrobat calculation function 'sum'. Except it doesn't. Autocalculate is 'on' but I can find no reference to a mechanism to force a re-calculation.
 
The form is enabled for completion by the Reader, which works except for the summation.
 
Thoughts?
