Can I use this as sign up sheet

Hello all,
I am new to Acrobat and wondering if I can use it in the following scenario.
 
I am running six training sessions with a limit of 30 people each session. I need for participants (and invitee list of 180 total) to sign up for one of the six sessions and to limit the number of people per session. Is this something that can be done using Acrobat X Pro?
 
I have looked at online sign up options, like Doodle, but the free version doesn't have all the features that I need and since this is for one time use, the paid versions are priced to steeply for our small non-profit budget.
 
I am hoping to figure out the "how" of building such a form when I complete my training next month. For now, I am just trying to figure out it's even possible.

You could create a PDF form in Acrobat and distribute it to the invitees. A lot of people use email for this, but if you will be collecting sensitive information such as credit card info, be aware that email is not secure. The form can be set up to submit to a web server, which can be done securely, but this requires some expertise.
