expandable text field

Using Acrobat 9 Pro, how does one add an expandable text field in a form that would work like Word. we want people to enter text of unlimited size (within reason, but it could be a couple pages) that can be viewed and printed in it's entirety (versus having to scroll through the text and it can't be viewed all at once). Word allows this feature when creating a form, but Acrobat doesn't seem to. We'd just stick with Word, but we like to submission and data tracking feature of Acrobat.

Consider using LiveCycle Designer to create the form instead of Acrobat. Designer forms can be dynamic and can do what you want.

I did and the options don't allow it to expand - the Text or Text Field objects don't do it

There are a number of settings that have to be right, such as "Expand to Fit" in the Y direction on field's Layout tab, and the document has to be saved as a dynamic form. You should be able to find out more information about setting up expanding text fields with LiveCycle Designer with a search.
