Fillable form help needed please!

I'm trying to create a fillable permission form in Adobe Acrobat 8 Professional and it's not so much the fillable form part that I'm having trouble with but authenticating it so that I can send it out to a specific individual who will fill in the fields with their contact information, sign it and send it back, however, I'm anticipating that most people who I send the form out to will be using Adobe Reader to view/work with it.

What I'm wondering is, is there a way of creating a secure fillable form in Adobe Acrobat 8 Professional that I can secure/authenticate/password-protect with a key that can then be used by that specific individual to access the form in Adobe Reader, sign it and send it back to us while ensuring that it has come from only that specific person?

So far, upon testing the form in Adobe Reader, I can't seem to sign the form at all. Is this possible in Reader, or at all?

For Reader to modify form field contents and save the information the PDF must have had 'Extended Reader Rights' applied to the from by an Acrobat product that can apply those rights, and it is not Reader.

Digital certificates that supported by Acrobat can be used to control access and provide verification of signatures.

I had some of my information infcorrect when I conferred with my boss this morning.

When we create a form-filled PDF with Acrobat (8 Pro), and then we test it by trying to sign the PDF ourselves, we are unable to; the fields in the drop-down menu of "Sign" are grey and inaccessible. Is that because we need 'Extended Reader Rights'? Or something further?

I was also mistaken, we do not need a key or a pass-word protected signature field, we just want to be able to post the fillable form PDF to our website so that anyone can access it, sign it (more than likely using Adobe Reader, because many of our clients who will be using the form are not computer-savvy and have the basics on their computers) and send it back to us.

Any further help is much appreciated!
