Help! How do I allow my Text Fields to expand and print in expanded mode?

Hi there,
I've created a basic Employee Assessment form in Acrobat 9 that has Text Fields which need to be able to scale themselves according to the amount of content that the employee adds. I also need these fields to print in their fully-expanded version (without overlapping any text that follows the field.)I've gone ahead and attempted to use LiveCycle, but that seemed even more complicated than necessary. I've looked through other posts on this issue, but I'm still having difficulty - I've a very new user! Please help!

This is only possible with LiveCycle Designer dynamic forms.

Is there a way that I can easily import my PDF form into LiveCycle so that it can recoginze what's already setup and allow me to make this small adjustment?
Somehow I've lost my left-hand side taskbar that detailed the formatting of the form. How do I get that back?
