How do people eliminate Acrobat features

I find it very interesting that features can be eliminated from the Acrobat program. What I mean is this, I've downloaded examples of many types of forms from this web site (such as Sue_Whitehead_Purchase_Order_Form or Siri_Khalsa_DHS-0000-ENG and many others).
 
When I try to examine the fields I have seen many times the "Forms>Add or Edit" option has totally been removed from the Menu.
 
I would love to know how to do this because this would be the perfect security I am looking for, for my work. Can we do this within the Acrobat program or would I need some other program?
 
Does anyone know how to go about doing this? Please, by all means, let me know.

They apply standard security using a permissions password, which restricts editing. More information on applying security to a document is in Acrobat's help, but in short, see "File > Properties > Security". This type of security is weak since it is easy to disable, but not with Acrobat or other Adobe software, unless the password is known.

Hi Mr Johnson, thanks for your reply but what I referring to is the Form Editing. In some of the sample forms I've downloaded the author has removed the Form Editing option. There isn't any way to view the structure or the scripting. It's just removed. And, this is what I need for my doc security.

I know how to set password restrictions, that's easy to do. It just blows my away how some people can remove the Editing from the Menu. How do they remove the option?

In the case of Sue Whitehead's purchase order form, the form was create with LiveCycle Designer, so the normal Acrobat forms stuff is not available. Note that it doesn't have any security applied. If you open the PDF in designer you'll be able to see how it works and edit it.

Since you are using the MacIntosh version of Acrobat, you will not have access to LiveCycle Designer. LiveCycle Designer is only available to the Windows version of Acrobat.
