how can I have a form user click a button on the form and have a pdf copy saved directly to a network folder?

A mapped network drive is no different from a local hard drive. So do it just like you'd save to a local folder, with JavaScript.

In AcroForms:
this.saveAs("/g/....");

In XFA Forms
event.target.saveAs("/g/....");
