Sending the form back with the form data

I've just downloaded the Acrobat 8 Professional trial. For a client, I need to create an application form for young people applying for scholarships. I would like them to be able to download the PDF from the web; fill it out; save it because they might need to work on it over a few hours; and then submit the ENTIRE form by email to the foundation office.
 
I can see that form data can be transmitted; and then imported into the original form on the receiving end. But how can I enable the intermediate "save" and have them submit the entire form back to the office?
