Is it possible to create a acrobat file that when open with a acrobat reader will show the current date and when printed, will show the current date?

Yes you can do this with JavaScript. Read this article at JavaScript Corner-

Be sure to check out the DatesExample1.pdf file which includes an example. Download and save the pdf file then open in Acrobat Pro to look at the code to see how it is done.
