I have set up a table with date fields across the top. When I enter a date, is there away to synchronize the dates for the rest of the week in sequence?

Yes there is. You can place code in one of the events on the first date field to fill out the values for all the other dates. Since this is for a LiveCycle form the code can be either FormCalc or JavaScript. There are several posts on this forum that cover date handling in FormCalc. You'll find more info in the FormCalc Reference, which has a whole chapter on Date functions.
