i have created a new form and understand how to distribute it for completion. however person who receives the data via "submit email" does not receive legible information. it is in html format. how would they gather information in a format that can be read?

That's odd, the default format for the email submit button is XML. Are you sure its in HTML format? How is the data represented?

As an alternative to the email submit button you can use a regular button. In the Object tab for the button select "Submit" as the "Control Type". Then on the Submit tab enter the email into the "Submit to URL" box. Prefix it with "mailto:" like this

mailto:me [at] company [dot] com
