Using adobe to sort by fields?

Is this possible? I use adobe to build class rosters that include participant name, employee id, address, etc. Each field is unique. Is there a way to sort these fields by last name?

I need a little more information im having issues visualizing your pdf.

Is it something like this..

ParName = Employee ID = Address = ssq-1 = etc = etc = etc
ParName = Employee ID = Address = ssq-1 = etc = etc = etc
ParName = Employee ID = Address = ssq-1 = etc = etc = etc
ParName = Employee ID = Address = ssq-1 = etc = etc = etc
ParName = Employee ID = Address = ssq-1 = etc = etc = etc
ParName = Employee ID = Address = ssq-1 = etc = etc = etc
ParName = Employee ID = Address = ssq-1 = etc = etc = etc

or something like this
