How do a set the default to open my PDF document with the bookmarks visible on the left-hand side?

With the file open go to File -> Document Properties, and under the Initial View tab in the Document Options section set Show to "Bookmark Pages and Panel." You must do this for each document as there is no default setting in Acrobat for this to happen globally for all PDFs you open.Hope that helps,
