Can a PDF template be created with editable and non-editable areas?

Sorry - probably a bit of a newbie question but i can't find an answer to this anywhere. Hope i'm also posting in the most relevant forum - apologies if i'm not.
 
I have been asked by a client if i can create (from an existing illustrator file) a PDF template with restricted editable areas - two to handle text for email and physical address and one to allow logos to be swapped. All other items and text need to be locked. Is it feasible to create this from the Illustrator file (or InDesign, Acrobat Pro etc) and if so how? and what software would the client need in order to do the edits and then save as a final version for print?

Sure you can. The text editing areas can be implemented using text form fields. You can use buttons for the logos, but it won't work with Reader, so you need to clarify who the end users of the document are intended to be.
