I would like to change the default "save as" folder so that when I convert a file I don't have to browse away from the folder I was in. I save all my .pdf files to the same foler on my desktop.

No, there is no option for changing the default save location. I saw an answer to this question on the Adobe User forums that suggested creating a shortcut in My Documents to the desired folder is about all you can do.
