Combining odd and even pages into one document

I have a large book (not copyrighted) that is being scanned. The pages are printed front and back but my scanner does not duplex. So I am ending up with two documents. One with the odd page numbers and one with the even page numbers.

I want to combine these pages so they are as written. Other than one page at a time, how can I do this? As the book is over 500 pages the one page at a time thing will get time consuming in a hurry.

Suggestions?

Thank you in advance for any words of wisdom you have to share.

Thank you both very much gentlemen. I checked out the thread George mentioned. Got a java script file that works like a charm. That is saying something since this is my first ever java script file experience.

Thanks again.
