cut and paste within a pdf of an old book

If you scan an old book as a pdf and you want to cut a paragraph out and paste in something new or move the text up how can you do that. I know how to cut and paste new pdf's where fonts are easily recognized. Is there a way to do this on an old book without acrobat recognizing the fonts in the old document as it does not appear to recognize them. Is there a way for acrobat to recognize fonts in an old book? I need to know how to do this in acrobat 7 professional on a mac. Is there any way possible to do what I want to do? Thanks for any help

As you stated, you scanned the book into PDF.
So, what you have are pages of images.
You do not have any renderable text that can be copied and pasted.

While the Profession version of Acrobat gives many options for manipulation of renderable text in a PDF, this is not the relative easy activity you do when you are using a word processor application.

You can perform OCR on your PDF to get OCR characters. You can do manipulaton of this. Again, not the same as when working with Word of some other program.

Document > OCR Text Recognition
Look over the Acrobat help file for discussion on the different OCR options.
