I am trying to consolidate documents by cutting sections and pasting over text. However, when I paste, it doubles the image in size. How do I prevent this?

You are saving several layers of information during the cut and paste process. The simplest way to decrease the size is to save the file as itself, which overwrites the stored information. Choose File > Save As, and click Save. You are prompted that the file exists.
