delete and replace text

Just installed 7.0. never used Acrobat before. I scanned a doc. into 7.0. I need to change some info in it. Tried "Touch up" thingie, but can't delete and replace or anything. Please Help a Newbie!!

The Touch Up Text Tool works only on "real" text, not the scanned image of text.

You can't change text on a scanned document unless you first convert the document to text.
