How to edit pdf once forms have been enabled

I have set up forms in a pdf document, then enabled "extend features in adobe reader" and saved the document. Now I see that there is a minor spelling mistake in the document and I want to correct it using the touch up text tool. But Acrobat won't let me. Can someone please tell me how to turn off whatever is stopping me from editing the document. I can't find any way to turn off the "extend features" option, which I assume is the culprit.
 
I'm using Acrobat 9 Pro, version 9.4.1, Windows 7 64.

Select: File > Save a Copy...

That deletes all of the form fields and I then have to put them all in again. Isn't there any way that I can make a simple text edit in the document, without losing all of the MULTIPLE fields I have put in my form?

That's strange, it's never done that for me. I'm not sure what to suggest, apart from always saving a copy of the file before you Reader-enable it.
