I have installed Adobe Acrobat Pro Extended but it is in Italian... is there anyway I can switch it to English? and if so... is there anyone out there that can walk me through it?

Did you buy the Italian version of Acrobat? Did you do it directly from Adobe? If so, try replacing it.
One thing to try is to press down Shift when opening the application. I seem to rememeber that it prompts you to select a language, although I'm not sure it would work.
