how do I stop the icon from jumping in my toolbar on the mac ? It's driving me nuts!!!

Like any other application on the MacIntosh or a pet dog it wants attention. Click on the jumping icon and see what action the application wants, most likely it has detected the need to update Acrobat or Reader and wants you permission.
