I have added attachments to my PDF document that are MS Word 2003 and Excel 2003 files. Is it possible for me to use the Link tool in Acrobat Pro 9 to create a link in the PDF to open the Word/Excel files?

not the link tool, use the Attach A File As A Comment tool
it's explained on AA9's help, search for "Attach A File As A Comment"
