If you remove the text on a pdf using the touch up text tool, is there a way to add text back to the deleted text area? There doesn't seem to be a label textbox.

It is almost always better to perform editing in the original application the document was created from, not in Acrobat. But....
you can add new text to a PDF in Acrobat 7 or 8 Pro with the Touch-Up Text tool. With the Touch Up tool active, put the cursor in the area for the new text, hold down the Control key and Left click the mouse. A dialog with the words "New Text" will pop up and ask what Font and Mode you want for the new text. Click OK. Now if you Right Click on that box and choose Properties- a new dialog allows you to choose Font size and a variety of other attributes for the text (of course, you must have the font on your system). Enter the new text. You may have to play around with the placement a bit to line it up as you want.
