OCR in Adobe Acrobat

I have been scanning in over three hundred documents over the past couple weeks, and unfortunately I have just discovered that they no longer contain any text characters (using the Text Select tool, I cannot highlight any text anymore). This is very bad, and I would like to get some semblance of text in my documents back. What should I do?
