In Firefox PDF Download Options when I check Acrobat 8.1 as file opening viewer I get an alert message that the viewer specified is not an executable file. Also, I'm running Windows XP with Outlook 2007 and when I go to a folder and check tools I'm not able to find folder options or file types to change my PDF settings from Reader 8.1 to Acrobat 8.1. Any suggestions?

The Tools menu you're looking for is in Windows XP. Simply open up any directory or folder and at the top menu you'll see the Tools menu. At the bottom of the Tools menu is the "Folder Options".
