How can I tell a high rez pdf from a standard from a low rez pdf looking at the files on the desktop? I cannot get this information using command I (Mac).

The only clue you have is examining file sizes, but this won't tell you what resolution images are in the PDFs. There's no real way of knowing from a desktop view.
The only way you can really tell what resolution an image file has is to use the TouchUp Object tool, press the Option key and double click the image. That action opens the image in Photoshop where you can examine the file size.
