When I convert a pdf document to Word, the Word document is not formatted correctly. I've heard that tagging could be part of the problem. I'm not familiar with tagging nor how to correct the tagging for a document. Thanks.

My Product Information:
Acrobat Pro 8, Windows

It is true that a properly tagged PDF can improve results when converted to Word. You'll need Adobe Acrobat Professional, ideally 7.0 or higher. Begin by "adding tags" (See the Accessibility menu under Advanced). To adjust tags to ensure, for example that a table is correctly represented, you'll want to start with Acrobat's Touch Up Reading Order Tool... and possibly move into the Tags palette itself.

If the PDF document includes a complex layout you are very unlikely to get a very high-quality (ie, accurate) conversion no matter what you do. You may need to settle for getting the text order correct, and reformatting in Word.
