Remove Info & Sanitize-Which PDF Version?

It seems that these two options only save in PDF 1.6. Is there a way to control the version that they save to?
 
Ideally we would like the program to save the file in the same version that it was in to begin with it.

Someone else may know a more whiz-bang way to do this but what I would do is create an Action for yourself via the Action Wizard in Acrobat X. Put the Remove HIdden Info and Sanitize steps into your action, then add a Reduce File Size step. Choose the compatibility you want in the Reduce File Size dialog box. In the future, any time you want to remove hidden info and sanitize, just run your action. You can make your action request the version each time or you can decide on a default for all your files.
