I recently started using Acrobat Pro 6.0. At one point, after creating a PDF from a scanned legal form, it printed out only the text fields, apparently in error. This can be used to fill in pre-printed forms. This could be a great use to me, is there a way i could set Acrobat to print only text fields and not anything else?

In the print dialog, there is a drop down where this can be set. On the upper right corner.
It's also a parameter in the PrintParams JavaScript object, so this could be scripted from your own print button on the toolbar.
