What functions are lost when saving to lower compatibility?

I have pdf's that were created in various versions of Acrobat (5-9) with various compatilities. In order to send them to a client they have asked that we send them as 1.4 or 1.5. What will happen to my newer documents when they are saved down. Some are hard scans, some are native from Word.

Is functionality lost? Will pagination change? How will they be different?

I recommend that you distill the documents to what ever version you need. There should not be any functionality lost.

In general terms, page layout and basic stuff (text etc) won't change, but newer features like embedded rich media will of course go, and some of the dynamic/functional aspects of a PDF like scripted forms and javascript can be killed by the earliest file formats. Transparency goes in 1.3, and the encryption methods in legacy files is of course limited, as the Acrobat 'apply security' popup window tells you.
