write over dialog (cancel/replace)

When writing over a PDF you get "cancel/replace" buttons on a Mac, where the default is "cancel".

1) Is there a keyboard command or key to go from "Cancel" to" Replace"

or

2) Can the Acrobat preference be changed to make "Replace" the Default?

You don't have the ability to change the default dialog behavior via a keyboard command or preference in Acrobat. This is to prevent inadvertent overrides in the Save As dialog.
