I am looking for help to set a submit button to 1) after the user complete the form the user emails the completed form [this I understand] 2) to send the entered data into excel or a database.

You might try left and right mouse clicks. Put text on either side of the button so the user will be able to understand rapidly.
eg click left to send [button face] click right to save.
