When creating PDF's using Adobe 7 Pro, it converts with no problem with plain text, but hangs when pictures are in the Document. Windows XP sp2, Office 2000 sp3

Can you provide more background on your conversion process? Are you using the PDFMaker macros in Office 2000? Do you get a specific error? Try turning off the Accessibility and Reflow button in the PDF Maker macro to see if this corrects the problem. If it does (and you're in Word), you may have a corrupt Word document. To test this, save the document as RTF and see if you get any errors.
