For Acrobat Professional 8 (Windows) -
From the Task bar > Create PDF > From File... > From the Open dialog, browse to the *.tiff file(s)
Select the *.tiff > click on the Open button > Save the PDF.OCR the PDF file.
From the Menu bar > Document > OCR Text Recognition > Recognize Text Using OCR
In the Recognize Text - Settings dialog -
Select Primary OCR Language, PDF Output Style, &, as appropriate, Downsample Images value.
Save the PDF. Use Find (Ctrl+F) to find text.

PDF Output Styles are:
Searchable Image | Searchable Image (Exact) | Formatted Text & Graphics
The Help file describes each of these.

Be well...

If you want the highest OCR quality, stay away from Adobe. They don't even write their own OCR software.

The best OCR available is provided by ABBYY and IRIS.
