I am running Acrobat Pro. v.5 and am having a problem embedding a particular font using Distiller. Having specified in the Distiller options to embed text as Ansi/Windows, the PDF is created with the font embedded as 'custom'.

First, you are running a VERY old version of Acrobat. I would recommend that you consider upgrading.
Second, there is no need to worry about the "encoding" that Distiller chooses. it doesn't effect your ability to read, copy, print, etc. the text.
