loss of text in PDF converted from closed document

I'm having an interesting issue with the pdf conversion of a graph. The file consists of a picture in a Word document. If I convert the file while it is open, the x-axis and the legend look fine at 100% zoom, but if converting the file while it is closed, the "-" sign in front of the first number in the x-axis scale disappears and some distortion of the legend occurs at 100%. A link to screenshots of the issue is shown below.

I have checked the Convert to PDF-Microsoft Office preferences in Adobe, and I should be using the same settings profile for conversions whether the file is open or closed. I have also tested other graphs with -1 in the axis and the issue only appears to happen if the number is in a specific place on the page.

Anyone else ever see something like this? Thanks!

experiment with this: copy the graphic to clipboard (in MS word, rt-click on image and copy). paste to an existing PDF and adjust with touchup object tool (i cant recall if AA7 has that tool). alternative: paste to photoshop (or ps elements); one way: file > new > image from clipboard. modify as needed. save as pdf.
