Have you tried using the Touch Up tool in Acrobat Pro.? Your ability to do this will be somewhat dependent on how iText created the PDF.

Better to go through there complete tutorial here - http://itextsharp.sourceforge.net/tutorial/ch01.php

pdfimport plugin works cool though :)
