why can I open some some pdf tables in excel and not in others? Do the amount of columns in a table have anything to do with it?

I'm assuming you know how to export tables to Excel. There shouldn't be a limitation on the number of cells. You could check this by selecting just a portion of cells on a page and open the selection in Excel.

But my guess is that there is a security issue going on with your files. Double check the documents to make sure that content copying and extraction priviledges are not restricted.

If that doesn't do it, try exporting the document via the Export button and export to Word and see if the file opens in Word. You can then export the Word doc to Excel. If you can do this successfully, then we need to look at the problem again and find out what's going on. Let us know.
