The page number display, on the toolbar is not going to show "n/n". The "(n of n)" depicts the physical page - page range. The value in the field at the left depicts the logical page based on what scheme is set up in the Pages panel's "Number Page" feature available from the context menu.
You can insert a "page#/n" value on each PDF page by adding it to a header or footer. This would provide page numbering sequences of various page ranges in the PDF that would be viewed by any user of the PDF.
