Scan to a Text Searchable PDF in Acrobat 8

I need to scan drawings (11X17) and make them a text searchable PDF file. what is the easiest way to to this?

- Acrobat 8 can directly interface with your scanner to scan the page and do OCR (try Create PDF>From Scanner, make sure that the OCR option at the bottom of the dialog is turned on)- Or, once you have scanned the page, open the image in Acrobat, that will give you PDF. Once you have a PDF, open it in Acrobat 8 and try Document>OCR Text ... option.

Relatively new 8.0 Pro user here...

I must be doing something wrong. I have scanned my document to .pdf, clicked Document>OCR Text Recognition, and it appears as if the document was captured. However, I tried to edit the text, and nothing happens.I am principally using this to edit Interrogatories, or just scan in Ints to be answered, but none of my keystrokes are appearing in the allegedly-OCR'ed document.

Any tips/advice is most welcomed.
