Setting Your Own Default Scan Settings

I scan to pdf about 30 documents a day, and it is very tedious to have to change the scanning settings every time I scan a new document. For example: the settings are always set to Grey Scale and I need it to be Black and White.

I have Adobe Acrobat Pro 7.0. Is there a way to set the default settings to the settings that I want?
