I don't know of a way to convert all CMYK text in Acrobat to 100% K. Your best bet is to get the client to spec the type with the proper color, recreate the PDF file and send the new file to you for output.

I had this problem today, and it looks like doing a color conversion works in Acrobat 7 Pro Mac. Tools > Print Production > Convert Color > destination Space Gray Gamma 2.2 (or some gray space.) Preserve Black, Don't Embed Profile. Output Preview confirms black only.Mark Godfrey, Carpintera, CA
