I have a form that has several text fields. These text fields are set to multi-lines and expand to fit. When typing on the form as the text wraps, I see the scroll bars. The question is how do I get the text boxes to expand when I print them so I can see all the text. Right now, all I get is whatever can fit in the current text box size and a plus sign. This does no good on paper.

I believe you would need to build XML based forms using LiveCycle Designer (Acrobat Pro on PC). It will enable dynamic form fields which is what you're looking for. Using the basic form tools won't get you what you want to my knowledge.
