Hey there,

In Acrobat 7 you could map colors to different channels (colors) in the convert colors dialog box, but I don't see this option in Acrobat 9 Pro. Can someone point me in the right direction.

In Acrobat 9 this must be done in the Ink Manager, there is a button in the convert colors dialog box.

Merlin, Ink Manager does not convert the color. it only tells an output engine to convert the spot color to CMYK. For this the output system has to read this information.

To really map a spot color you have to use 3rd party tools (callas pdfToolbox 4, Pistop, Heidelberg Prinect Toolbox, ...)
