This is what I want to do. Be able to email a customer a form that they can complete and using a digital signature 'lock' the form with that field then email it back. So - here we won't have a signature 'file' so to speak. I can't find an answer to this one, probably missed it. But any ideas would be useful. Using v8.1 (haven't got the pennies to upgrade :) ).
Using Acrobat and LiveCycle

You could try placing a signature field first for them to just click on to sign it. When you have drew the signature field, ctrl/right click/double click the field and go properties, in the signed tab you can tell it to the lock the fields down by choosing "mark as read only " and chose all fields. Hope this helps?
