I want to be able to have someone fill out a form on line and email the information to me. The person filling out the form has had no prior contact with me our my organization. The form will contain sensitive information that should only be available to me the recipient of the email

You should never use email for that type of data gathering. Use a secured server and gather the data in a database on that server.
